Pancake Day Recipes

Pancake Day comes as a welcome relief from the dreary dark Winter days, but it's just as yummy for toddlers as it is for mummies and daddies. But why do we celebrate and enjoy Pancake Day? Pancake Day, or Shrove Tuesday is celebrated by Christians because it is the last day before Lent begins. Lent is a time of abstinence and giving things up so Pancake Day is essentially a way in which we use some of the things up that can be given up for Lent.

Shrove Tuesday falls 47 days before Easter Sunday, so the date of pancake date varies each year. You may or may not be giving things up for Lent, but most of us, especially those with kids, will be indulging in a few pancakes! Here are some simple Pancake recipes which you can make with your toddlers.

Traditional Pancake Recipe
Here's the basics:
4oz Plain flour
2 Eggs
200ml/7floz Milk mixed with 75ml/3floz water
50g/2oz Butter
Pinch of salt

For the middle:
Lemons
Caster sugar
Golden syrup

How to make the pancakes:

Sift the flour and salt into a bowl and make a well in the middle. Add in both eggs and whisk with either a fork, or a whisk until you have a smooth consistency with little or no lumps. Now melt the butter in a pan and add to tablespoons into the batter. Add the rest of the butter into a frying pan and turn the heat up so the butter gets really hot.

Once the butter is hot, turn it down to a medium heat and pour in a small amount of the batter. Two tablespoons is probably about the right amount. Move the pan around so that the batter is evenly spread. Check to see if the batter is browning and once the batter can move around without breaking up you are ready to flip! Either turn flip the pancake with a palette knife or toss the pancake yourself by sliding the pancake half in, half out of the pan and flipping it completely over. (You may drop a few in the process, but the kids will love it!)

Now, its ready to eat. Simply add more butter and keep the pan hot while making more pancakes. You can keep the pancakes warming in an oven while you make enough for the whole family to enjoy.

For the middle of your pancakes:

You can make savory pancakes first, try:
Cheese
Cheese and ham slices
Cheese and spinach
Mozzarella and basil
Cheese and tomato
Philadelphia
Cream cheese and chives

And of course, all kids love the sweet fillings! Try:
Sugar and lemon juice
Golden Syrup
Honey
Nutella
Grated chocolate
