Homemade sausage patties

A healthier alternative to meatballs, and full of protein when you serve them with scrambled eggs

  • Line a large baking sheet with foil or parchment paper.
  • In a large bowl, mix together the pork, garlic, sage, thyme, nutmeg, salt (if using) and black pepper. Mix well, then stir in the egg until well combined.
  • Cover the bowl with cling film and leave the mixture in the fridge to chill for 30 minutes.
  • Carefully shape the meat mixture into 8 equal-sized patties, and place on the prepared baking sheet. Chill the patties in the fridge for 15 minutes.
  • Heat the butter or oil in a large, non-stick frying pan over a medium heat. Fry the sausage patties for 3-4 minutes on each side until cooked through and golden brown. Serve straight away with the scrambled eggs.
  • Makes 8

    What you need:

    • 500g ground pork
    • 2 garlic cloves, finely chopped
    • 1 tbsp dried sage
    • ½ tbsp dried thyme
    • Pinch of ground nutmeg
    • ½ tsp each salt (optional) and black pepper
    • 1 medium free-range egg
    • Butter or cooking spray, for frying
    • Scrambled eggs, to serve
