Weaning onto normal food?

My son is 9.5 months old and has established weaning really well and I wanted to move him more onto the foods that we eat at home i.e. Sweet 'n' Sour Chicken, Thai Curry, Chilli ect. I have given him Spag Bol already and he loved it but my partner keeps nagging me that I am trying to push our son to fast but he eats the way he does because I have pushed him through the weaning stages. HV advised to water down any shop bought sauces and keep an eye on the salt levels but I was wondering if anyone else has tried this yet.

my lo is 28 weeks and he eats nearly everything we do, i just make sure he's eating homemade meals rather than packet sauces and hes doing fine xx
