I have seven week old baby who sleeps for about 8 hours a night, waking up once after 4-5 hours to be fed. I normally put him down around about 11 o'clock or midnight so that I can get a full 4 or 5 hour stretch of sleep as well, but at what stage should I start trying to get him to go down earlier? If I put him down at 8-ish and then go to bed myself at 10, I'll only get a couple of hours sleep before he wakes up again. Should I just wait until he's sleeping for more than 4-5 hours in one go before I start trying to get him down earlier?

You could try doing a dream feed I did this with my son until he was around 6 months, you feed them at around 10pm while they are sleeping, I breast fed him but I had a friend who was bottle feeding and she did it to, works a treat, may take a couple of nights for them to get used to it. It's a lovely peaceful feed while they sleep, but then he would go for longer.
