Egg Noodles with Tofu and Green Beans

It's amazing how much kids really love noodles. This recipe is good enough to make an extra bowl full for yourself.

  1. Cook the noodles in boiling water according to the packet instructions. Drain and set aside.
  2. Meanwhile, stir together the soy sauce, lime juice, fish sauce and sugar.
  3. Heat a wok or large frying pan over
  4. high heat. Add the oil and, when smoking, add the ginger and beans and stir-fry for 2 minutes.
  5. Add the tofu and stir-fry until golden.
  6. Add the soy sauce mixture and cook for 1 minute, or until slightly reduced.
  7. Add the noodles to the wok and toss well, or divide the noodles among serving bowls and top with the sauce. Serve with the cucumber and cashews.

Serves 4

  • 2 tbsps soy sauce
  • 1 tbsp lime juice
  • 1 tbsp fish sauce
  • 2 tsps brown sugar
  • 1 tbsp light-flavoured oil
  • 4cm piece of fresh ginger,
  • peeled and julienned or grated
  • 200g green beans, sliced
  • 300g tofu, cut into batons

To serve

  • cucumber batons
  • chopped cashew nuts
