No-bake mini cheesecakes for little mouths
Serves 8
For the base:
- 110g plain flour
- 2 pinches of salt
- 2 pinches of baking powder
- 1 vanilla bean, seeds scraped
- 90g unsalted butter, softened
- 75g sugar
- 2 egg yolks
For the topping:
- 350ml whipping cream
- 720g cream cheese at room temperature
- 1 vanilla bean, seeds scraped
- 180g demerara sugar
- Juice and grated zest of 1 lemon
