A perfect treat to give as gifts or goodie bags - what child doesn't love animal crackers?
Preheat the oven to 160°C. Line two large baking sheets with parchment paper.
Sift the flours, baking soda and salt together in a medium bowl and set aside. (Arrowroot flour is easily digestible and its fine texture creates baked goods with a fine crumb.)
Cream the sugar and butter together in the bowl of a stand mixer fitted with the paddle attachment. Add the eggs, one at a time, and mix until fully incorporated. Add the sifted dry ingredients and mix until the dough comes together and away from the sides of the bowl.
Divide the dough into two pieces. Wrap each piece in plastic wrap and refrigerate for 30 minutes.
Roll each piece of dough between two sheets of parchment paper until about 6mm thick. Cut out animal shapes with small animal cookie cutters and place on the prepared baking sheets. Bake for about 15 minutes, until the crackers just start to turn golden around the edges. The crackers should be completely dry when they are at room temperature.
You can also create spotted animal crackers by adding 1 tbsp of poppy seeds to the dry ingredients then continuing with the recipe as above.
The crackers will keep in an airtight container for up to 2 weeks.

185ml granulated sugar
125ml butter, at room temperature
5ml pure vanilla extract
