Recipe: Flourless banana pancakes with cherry nice cream
Crowd-pleasing pancakes that are healthy too.
WHAT YOU NEED
FOR THE PANCAKES
2 bananas (180g), peeled
7 tbsp milk (I use almond but
any milk works well)
100g rolled oats
1-2 tbsp coconut oil, for fr ying
FOR THE NICE CREAM
150g pitted cherries
4 bananas, peeled and frozen
1 tsp vanilla extract
1 tbsp brown sugar
¼ tsp ground cinnamon
Zest of ½ lemon
WHAT TO DO
- First, make the pancakes. In a blender or food processor, blitz
all the ingredients (except the oil) until smooth.
- Heat a non-stick fr ying pan over a medium heat and grease with coconut oil. Fr y spoonfuls of the batter until you can flip them and then cook for another minute on the other side.
- To make the cherr y nice cream, chop 100g of the cherries in half and set aside. Put the remaining ingredients in a food processor
and blend until creamy, scraping down the sides ever y 30 seconds. Process until smooth, then stir in the reser ved chopped cherries.
- Enjoy the nice cream straight away, scooped onto the pancakes
