Bread pudding with a banana sauce

Method

1. Preheat oven to 160°C. In a large mixing bowl, whisk together eggs, salt, sugar, cinnamon, nutmeg, and milk.
2. Stir in bread cubes, pineapple, coconut, and raisins (optional). Pour into 13- X 9- X 2-inch pan coated with cooking spray and sprinkle a little bit of Walt Disney World magic
3. Bake for 1 hour and 10 minutes. Remove from oven and let stand for 5 minutes.

Bananas Foster Sauce

  1. While the bread pudding is baking, in a medium saucepan over high heat, combine brown sugar, corn syrup, butter, and half of the heavy cream. Bring to a rolling boil.
  2. Boil for 10 minutes, then add remaining cream. Boil additional minute.
  3. Add rum and vanilla extract. Flambé using a long-stemmed lighter.
  4. Let boil until the flame goes out.
  5. Reduce to a simmer and stir with a high-heat spatula.
  6. Add bananas to caramel sauce. Remove from heat and set aside.
  7. Serve hot bread pudding with a scoop of vanilla ice cream and top with warm sauce.

Ingredients - Serves 6 to 8

  • 5 large eggs
  • ½ teaspoon salt
  • 255g sugar
  • ½ teaspoon cinnamon
  • A pinch of nutmeg
  • 720ml whole milk
  • 1 loaf challah bread or egg-style bread, cut in 1/2-inch cubes
  • 1 small can crushed pineapple, drained
  • 20g sweetened shredded coconut
  • 35g raisins (optional)
  • Vanilla ice cream

Bananas Foster Sauce

  • 170g dark brown sugar
  • 120ml corn syrup
  • 120g unsalted butter
  • 240 ml heavy cream, divided
  • 120ml spiced or dark rum
  • 1 teaspoon vanilla extract
  • 3 bananas, peeled and sliced
